The story
Albrun is an Alpine restaurant at Binntalstrasse 24 in Binn, run by the Inderschmitten family inside their chalet hotel. The 2026 Michelin Bib Gourmand recognises its good quality, good value cooking.
Mario Inderschmitten stayed in his home village, and his menu draws on what the Binntal and the wider Alps produce. The house calls its style Alpine Fusion Dining, pairing local ingredients with selected top products from further afield. The 2026 Gault&Millau report scored the restaurant 15 points and singled out the spicy Ziger gnocchi, served with Valais dried meat, Belper Knolle and kale. The reviewer also noted that the regional card has become smaller over time.
The Black Forest is the chef's signature: beef sirloin with sour cherries, cocoa and kirsch, served with risotto. The 200 g Pfeffersteak uses Swiss premium beef with a Valle Maggia pepper sauce and terroir fries. Spring menus have featured Alpine pike-perch from the Susten pass with ramson risotto and braised Alpine pork with spring vegetables.
The dining room is rustic, in keeping with the chalet setting. Laetitia Inderschmitten leads the service, which the Gault&Millau reviewer found warm. The wine list is strong on Valais crus. Desserts include a Vacherin made with rosemary meringue, and a café gourmand paired with coffee roasted by Sempione in Termen.
