The story
Du Théâtre is a modern cuisine restaurant in Chur at Avenue du Théâtre 7, and Gault&Millau awarded it 17 points in 2026. The menus follow the seasons, and the spring tasting centred on Valais white asparagus.
Gault&Millau credits the cooking to Colombo Zefinetti, nephew of patron Mauro Capelli, who runs the dining room. The summer menu lists cured ham from the Val d'Illiez and handmade mezze maniche with a ricotta mousse.
The spring tasting opened with a white chocolate lollipop filled with asparagus cream. Later courses brought asparagus tempura over pistachio and sorrel purée, and tortellini with mushrooms in a rabbit broth. Dessert paired asparagus ice cream with milk quark.
