The story
LA CHAVALLERA in der Krone Säumerei am Inn serves modern Alpine cuisine at Via Cumünela 2 in La Punt-Chamues-ch, in the Upper Engadine. The restaurant holds one Michelin star (2026), and Gault&Millau awarded it 17 points in the same year. The kitchen sits inside a historic boutique hotel in the Krone.
British-born chef James Baron runs the kitchen with his wife Natacha. Gault&Millau describes his combinations as increasingly confident, with a clear sense of how each course follows the last. The menu moves from small, precise bites to heartier mains, and local produce anchors much of it.
Early courses might include fish crackers with a beetroot crust and horseradish mayonnaise, or a pumpkin dish with lightly smoked char, apple and fermented pumpkin purée. Caramelised chicory with grapefruit, sea bass confit in brown butter, and roast quail with truffle jus are among the mains. The dessert of meringue, grape sorbet and lime gel is described as a little sweet, though the kitchen's level is clearly higher than before. A new bakery and bistro, Fö e Flamma dal Barun, has also opened in the house.
