The story
Pinte, at Sommerhaldenstrasse 20 in Baden, is a village restaurant in Dättwil with a classic, seasonal kitchen. It is listed in the Michelin Guide as a recommended address for 2026.
Patrick Troxler runs the house, and Gault&Millau awarded it 14 points in 2026. The reviewers found the car park full, the village taproom full and the Gourmetstübli full on an ordinary weekday. The daily "Menü 1 bis 5" are served quickly, alongside a few house classics such as the Pinte cordon bleu and bratwurst from the Hubihof. The restaurant describes its cooking as classic and traditional, touched by modern influences.
Neighbouring Hubihof supplies much of the produce, including organic lamb and, more recently, organic Wagyu, served as an oversized entrecôte. The wider menu lists lobster bisque as soup of the day, Walliser Egli with farmhouse bacon, and vegetarian capuns with mountain cheese. In the more ambitious dining room, Dover sole is filleted at the table. Bread is baked in-house from organic spelt and wheat.
The wine list runs to about 250 positions, and the restaurant states that its cellar holds only European wines. Gault&Millau singled out a rare bottle from Ticino's Castello di Cantone as a pleasant surprise for this part of Aargau.
Lunch is a daily changing menu served from 11:30 to 13:30, and the à la carte evening menu runs from 18:00 to 21:30. The house has several rooms, including a banquet space, and its own parking in front of the entrance.
