The story
Dashi is a Japanese restaurant at Rådmansgatan 23 in Stockholm, awarded one Michelin Star in 2026. It serves 16 guests per seating and builds the evening around a single tasting menu and a saké pairing.
The restaurant is named after the stock at the base of Japanese cooking, which its website describes as clean, smoky and rich with umami. That thinking shapes a kitchen rooted in Japanese food culture and tradition. The White Guide also rated Dashi at Global Masters level in 2026.
The Osusume tasting menu costs 1295 SEK, and the saké pairing is 995 SEK. Highlights include dry aged fish, meats and seasonal produce, and the menu can be adapted for pescatarian guests. Wine is poured by the glass and bottle. Service is a banquet, so everyone in the room is served at the same time.
Dashi opens Wednesday to Saturday with two seatings, at 17.30 and 20.30. The counter is the heart of the room, and guests sit on bar stools while courses are finished in front of them. Two high tables for two offer a quieter option. A round table for four or five looks into the kitchen. Dashi takes reservations only, and doors close 15 minutes after the booking time.
