The story
Knystaforsen in Hyltebruk serves New Nordic cooking at Rydöforsvägen 4, 314 42 Rydöbruk, and holds one Michelin star for 2026. The restaurant sits in an old sawmill beside the Nissan River, where the kitchen cooks over flames and embers.
The kitchen cooks outdoors, and an evening together runs about four hours. The tasting menu follows the terroir, with some ingredients taken from rivers and lakes, others foraged in the woods, and wild game and artisanal products sourced from local producers. Prices run from 2,650 SEK on Thursdays to 2,850 SEK on Saturdays. Vegan menus and menus free from milk protein are not available.
From November 13 to December 31, 2026, the team moves its open-fire cooking to the Japanese Pagoda at Tivoli Gardens in Copenhagen.
Eva and Nicolai Tram, a Danish couple, bought the sawmill and made it their home before opening it to guests. The White Guide gave the restaurant its Very fine level rating for 2026, recognizing the sustainable way they reshaped the site. Salmon leap into the river next door, and guests can also book a room for the night from 2,200 SEK.
Beverage pairings range from 1,250 to 2,550 SEK across four options. The Luscious pairing is built on non-alcoholic juices, kombuchas and wild fermented drinks, many brewed in-house or made by friends of the restaurant. The Generous pairing stays with classic wines, with a few elegant surprises.
