The story
Restaurang Fyr is a modern cuisine restaurant at Tjuvahålsvägen 9 in Tylösand, Halmstad, and it holds White Guide Masters level for 2026. The kitchen leans on fish and seafood, cooked in part over the open fire that gives the restaurant its name.
Jacob Holmström grew up in Halmstad and opened Fyr in spring 2024, after twelve years running the two-star Gastrologik in Stockholm. His training took him through Gothenburg, Oslo and Paris, where he worked for Pascal Barbot at Astrance. The menu is à la carte, with Swedish ingredients and west coast produce at the centre.
The meal starts with a snack menu of local charcuterie, cheese, pickles and small warm bites such as roe toast. Starters are complete small plates, typically a crudo, ceviche or sashimi in the house style, alongside dishes like tartare or pasta with lobster and caviar. A shellfish section is served raw or cooked over the open fire, with oysters from the west coast, grilled langoustine or wood-fired mussels. Desserts are limited to four or five, always including a fruit or berry dessert and a chocolate one.
The bar sits by the sea with a view across Tylön, where the lighthouse that inspired the name stands a few hundred metres out. Guests can choose outdoor seating or a table with a view, and the restaurant also offers a private room for dinners and events. Wine pairing is available alongside the meal.
