The story
Koka, at Victoriagaten 12 in Göteborg, is a modern Swedish restaurant that earned a White Guide Masters level rating for 2026. The dining room sits a few steps above street level, and the kitchen works mainly with local growers, fishers and foragers.
Koka builds its menus around fish, shellfish, vegetables and game. About 90 percent of what the kitchen uses is organic. The cooking aims to be focused and pleasurable, with the main ingredient of each dish given room to lead. Every menu can be prepared vegetarian or vegan if you mention your needs when booking.
The room is a stylish space of wood and deep bordeaux red, with small mirrors in each corner and large windows onto the street. The White Guide singled out a clear mushroom broth made from leftover stems, finished with dill oil, and bread with a crisp crust and soft, tangy crumb. The restaurant treats the drinks menu as part of the meal, and the sparkling Les Fioles from Huguenot Tassin opens the evening with a lively acidity.
