The story
Vuelve Carolina, at Correos 8 in central Valencia, is a modern world cuisine restaurant that earned a Michelin Recommended mention in 2026. The menu moves between flavors from different countries, and the room works as a dining room, bar and events space at once.
Gonzalo Silla is the head chef. The restaurant's patatas bravas, which the site says won Best Creative Bravas at Madrid Fusión 2024, arrive as small potato fritters meant for a single bite, crisp outside and creamy within. The brava sauce is built on smoked ham oil, garlic, onion, sweet and spicy paprika, cumin and chipotle, with a touch of allioli and a thin slice of smoked Iberian pork jowl on top.
The bar suits guests who want to watch the kitchen up close or simply settle in for a cocktail. The list pairs drinks with the food, and it includes non-alcoholic cocktails. Playlists curated for the restaurant play inside and out, and the venue hosts events through the year.
Weekday lunch includes the Midday Trip menu, and guests can also choose the Around the World menu, a #notjustfood menu or à la carte dishes. Groups of up to 70 can book a closed menu that can be adapted to their tastes. Takeaway is available without delivery, and there is a terrace at street level. Vegetarian and vegan guests should check options ahead of time, since many dishes contain animal products.
