The story
Saiti serves modern cuisine at Reina Doña Germana 4 in Valencia, and it received a Michelin Recommended distinction in 2026. The menus follow the seasons and are built around Valencian produce.
Vicente Patiño is the chef, and the restaurant describes its kitchen as classic technique with a modern touch. The team sources from local suppliers, uses organic products where possible, and works to reduce food waste. That approach earned the restaurant One Radish in the We're Smart Green Guide for 2026.
Three set menus rotate with each season. Raíces, at 48 €, is a weekday lunch option with snacks, three shared starters or one individual starter, a rice or stew of the day, and dessert. Na Germana (75 €) and Lo Rat Penat (95 €) add more starters, a fish course, a meat course and two desserts. Wine pairings come in short (60 €) and long (80 €) versions, and drinks are not included in the menu price.
The wine list holds more than 140 references, selected and updated by the sommelier. Each bottle is chosen to suit the kitchen's dishes, which makes the pairings a natural extension of the menu rather than an add-on.
