The story
Lienzo is a Mediterranean restaurant at Plaza de Tetuán 18 in Valencia, and its 2026 Michelin star anchors a modern cuisine kitchen led by chef María José Martínez.
Martínez began by adding honey to the petit fours that close a meal, then decided to use it in every dish on the menu. Her interest in bees extends beyond the plate, and the kitchen also works with propolis, wax and pollen. Most ingredients are organic and local, sourced from nearby farmers who grow without monocultures. Fish comes from the market, and the oysters come from Valencian producers. Two dishes guests often mention are a cauliflower preparation and green beans served with cod pil pil in a clay dish.
Juanjo Soria runs the dining room and co-owns the restaurant with the chef. He has been selected for the Top 100 Sommeliers España, and the restaurant's news pages describe him as the first sommelier from the city of Valencia on that list. The We're Smart Green Guide gives Lienzo four radishes for 2026, a rating that fits a kitchen built around local growers.
