The story
El Visco in Valderrobres, Spain, is a seasonal kitchen at Carretera A-1414 (Km 19), listed as Michelin Recommended for 2026. The restaurant sits on a rural estate in the Matarraña, and its menus change with what the land produces.
Much of what the kitchen serves is grown, harvested or gathered on the property. Vegetable beds, greenhouses and herb gardens supply the bulk of the ingredients through the year. Guests can walk the gardens to see what is flowering that day, which often ends up on the plate. Produce from outside the estate comes from trusted local artisan producers, working within the Slow Food guidelines, of which the restaurant is a proud member. The We're Smart Green Guide awarded it 4 Radishes for 2026.
The site lists several seasonal dishes: salmonete in a turmeric sauce, colinabo with green apple sorbet, and veal sirloin from the trashumancia tradition. That veal comes from cattle that graze the Maestrazgo uplands in summer and the Mediterranean coast in winter. Courgette flowers, baby carrot and sorrel leaves appear alongside, and dessert brings an elderflower foam with cherries.
