The story
Arrels is a contemporary restaurant at Castillo 18 in Sagunto, and it holds one Michelin Star in 2026 for high quality cooking. Chef Vicky Sevilla leads the kitchen, working from the old town on the road up toward the castle.
Sevilla opened Arrels when she was 25. Her modern cuisine starts from memory, territory and product, and reinterprets Valencian roots with technical rigour. She has cooked at the DNA Festival run by Quique Dacosta and at Gastronoma Valencia. The restaurant also carries two Radishes from the We're Smart Green Guide for 2026.
The Menú Arrels runs to eight savoury courses and three desserts, with an optional wine pairing. The shorter Menú Saba has six savoury courses and two desserts. Both have vegetal versions, and a midday à la carte menu is offered from Tuesday to Friday. Dishes follow fresh, seasonal produce, so the menus shift through the year and sometimes within a week.
The dining room sits in the former stables of the Palacio de los Duques de Gaeta, a 16th-century palace. Old arches in Gothic, Mozarabic and Romanesque styles are still visible. The decoration is modern and the mood is warm, with the old stonework left to speak for itself.
