The story
Bardal, at José Aparicio 1 in Ronda, earned two Michelin stars in 2026 for what the guide calls excellent cooking. This is fine dining built around two tasting menus, with Andalusian touches running through the plates.
The restaurant's motto is "el relato es la cocina", the story is the kitchen. Guests choose between the Bardal Menu at €195 and the Large Bardal Menu at €230. Both begin with shiitake soup and a slice of shiitake ice cream, and both end with petit-fours. The restaurant also holds One Radish from the We're Smart Green Guide (2026).
Early courses include trout aspic with smoked cream and squid with a fermented miso made from its own offal. Later come oyster and horseradish "gazpachuelo", partridge with asparagus and marinated kumquat, and monkfish in Andalusian marinade. The lamb is served with pesto pasture and milk skin. The larger menu adds codfish with black butifarra and veal sweetbreads in a tendon sauce infused with Bourbon vanilla. Desserts include pineapple with ginger and anise, and mushrooms with coffee and pine nuts.
A wine pairing costs €100 with the Bardal Menu and €115 with the Large Menu. The great wine pairing is €215 or €250. Artisanal cheeses can be added for €25.
