The story
La Aquarela is a Canarian tasting-menu restaurant at Barranco de la Verga, Patalavaca, 35129, in Puerto Rico on Gran Canaria, and it holds one Michelin star for 2026.
Head chef Germán Ortega builds the degustation menus from his latest creations, using local seasonal produce, top-quality meat, fish and seafood. Executive chef Desiré Cabrera Peña, from Las Palmas de Gran Canaria, started in pastry and has worked alongside Ortega for more than ten years. Her earlier kitchens include Tickets, Gleneagles Hotel and Andrew Fairlie, plus Stokkøya Strandhotel in Norway. The kitchen also holds the We're Smart Green Guide's five radishes for 2026.
The Experience menu costs €158 and runs about three hours. Its courses include red tuna with sardine and ginger, Mogán shrimp, Canarian pork with Pajonales and prunes, and glazed suckling lamb shoulder with mustard seed. The shorter Little Experience is €128, and a vegetarian Harvest menu is €130, built around grilled aubergine, savoury waffle and risotto with basil. Dessert options include apple with sorrel and spices, or chocolate with almond and banana.
The restaurant sits in front of Anfi Del Mar in the south of Gran Canaria and has operated for more than 30 years. Maître and head sommelier Nikola Ivicic was named one of Spain's Top 100 Sommeliers by Sommelier Edit in 2026. The wine list leans on Champagne and Spanish cava, and the optional pairing is €110 for ten glasses.
