The story
Pabú is a seasonal restaurant at Calle Panamá 4 in Madrid, and its kitchen earned one Michelin star in 2026 for high quality cooking.
Coco Montes runs the kitchen after training at Le Cordon Bleu Paris and working under Alain Passard at L'Arpège. The menu follows microseason, shaped by small local producers and agroecological growers. Dishes change as the available produce changes.
Rita González directs the dining room, drawing on training as an industrial engineer and years as a host. The space is fully accessible, with a lift and an adapted restroom. Guests can also choose air conditioning or outdoor seating, depending on the day.
