The story
Gaytán, at Príncipe de Vergara 205 in Madrid, is a modern cuisine restaurant that earned a Michelin 1 Star in 2026. Chef Javier Aranda builds the meal around live cooking, so the experience begins before the first plate reaches the table.
The dining room is arranged around an oval kitchen, where guests can watch each dish being prepared. The space is barrier-free and lists wheelchair access among its facilities. Private parties and events are also offered.
The INAUREM tasting menu is priced at 150€ and draws on the season's best raw ingredients. Current courses include a citrus and juniper cloud, a herring flan, and suckling pig from Ávila cooked two ways with Mediterranean flavours. The meal closes with a smoked cocoa mousse served with coffee namelaka and roasted corn ice cream, and a wine pairing can be added.
