The story
Desborre is a contemporary Spanish restaurant at De la Unión 8 in Madrid, listed as Michelin Recommended in 2026. Chef Lucia Grávalos builds her menu on produce from organic gardens, free-range farms and sustainable fisheries.
Grávalos was born in La Rioja and grew up cooking beside her grandmother, Ana Mari. She has also worked with Martín Berasategui, Dani García and Álvaro Salazar. She describes her kitchen as traditional, technical and circular. The menu is organised around five axes: Bar, Huerta, Mar, Pasto and Postre.
Pescados Loureda has supplied fish and shellfish from A Coruña since 1975. Sapiens Sostenible grows vegetables at the Soto del Grillo agroecological park and delivers them in electric vehicles. The restaurant also holds 2 Radishes in the Smart Green Guide for 2026. The room occupies a small premises near the Teatro Real, restored with reclaimed bricks, beams and mirrors. Works by Barjola and Luis Feito hang against brickwork dating from 1900.
