The story

Coque Madrid: Two Michelin Stars for Creative Spanish Cooking

Coque, at Marqués de Riscal 11 in Madrid, is a creative Spanish kitchen that holds two Michelin stars (2026) for excellent cooking. The Sandoval family moved the restaurant to the city centre from Humanes, where it had run a family restaurant for more than 40 years.

Cooking and the five-course story

Mario Sandoval directs the kitchen, which he describes as evolved yet rooted in its land. The menu, called La Historia de Coque en cinco platos, traces the restaurant's history across five dishes. A vegan and vegetarian option is listed, and allergen information is published on the website.

Four spaces, one route

Dinner moves through four areas: cocktail bar, cellar, kitchen and dining room. Mario, Rafael and Diego Sandoval planned the layout under the overall supervision of designer Jean Porsche. The We're Smart Green Guide awards Coque three radishes (2026).
