The story
Simposio is a contemporary Spanish restaurant at Moreras 2 in San Antonio de Benagéber, L'Eliana, and it holds one Michelin star (2026) for high quality cooking. Roger Julián's kitchen works with Valencian produce in a market-led style.
The menu follows the market, so there is no fixed card. The kitchen cooks with fresh, seasonal ingredients from nearby producers, and the set menus change with what arrives. Tasting menus run seven, ten or twelve courses, priced from 68 euros to 105 euros. The wine list draws entirely from the Valencian Community.
Among the dishes the restaurant highlights are smoked rice with Valencian oyster and coastal vegetables, pigeon with smoked cauliflower cream, and strawberries pickled with white chocolate and basil. The room is open, and the central kitchen lets guests speak directly with the team. Groups of eight or more can book a menu, and the space can be reserved privately for events.
