The story
Muxgo is a seasonal restaurant at León y Castillo 227 in Las Palmas de Gran Canaria, inside the Hotel Santa Catalina Royal Hideaway. The Michelin Guide awarded it one star in 2026 for high quality cooking, and the kitchen works with Canarian produce grown close to home.
Borja Marrero was born in Tejeda, a village in Gran Canaria, and trained at the Hofmann hospitality school in Barcelona. He then worked in kitchens led by Ferran Adrià, Arzak and Ramón Freixa, followed by a period cooking in Mexico City and later as a private chef.
His dishes start on the chef's own ecological estate before they reach the kitchen. The approach is kilometre-zero, with local suppliers and a closed-loop model.
Each menu draws on the island's produce. Los Orígenes honours traditional Canarian recipes, while the other selections lean contemporary. The dress code is formal, and the restaurant offers a private room and outdoor seating. The We're Smart Green Guide gave Muxgo five radishes in 2026.
