The story
El Celler de Can Roca, at Carrer de Can Sunyer 48 in Girona, is a Catalan restaurant that holds three Michelin stars (2026). The Roca brothers have been developing the project for more than 35 years, and it remains unfinished by their own account.
The dining room is built around a triangular cloister that receives natural light from an interior forest. Each table holds three stones, which repeat the triangle. Privacy comes without opacity, and light and reflections move across the room. The restaurant calls this the dance of the senses.
Melcior Montero and Marianna Suárez work as maîtres, and Audrey Doré leads the sommeliers as head sommelier, with Cyril Vermeulen and Ivan Camps on the wine team. Josep Roca describes the waiter's role as grounded in generosity and emotional intelligence more than in knowledge alone. Guests can add wine pairing, and the restaurant has ranked first on The World's 50 Best Restaurants list, in 2013 and 2015.
