The story
Echaurren Tradición serves Basque and modern Spanish cooking at Padre José García 19 in Ezcaray, La Rioja, and holds a Michelin two-star listing for 2026. The restaurant sits within the Echaurren hotel, a century-old house in the town.
Marisa Sánchez built the menu around traditional Riojan recipes, which the house now describes as the core of its legacy. Her croquetas became the family's signature dish. Her son, chef Francis Paniego, now leads the house and carries those recipes forward alongside his own work.
The restaurant offers a tasting menu and wine pairing, with an interesting wine list and a private room for groups. The menu lists vegetarian and gluten-free options, and the kitchen works with farm-to-table and organic produce.
