The story
Arzak is a Basque restaurant at Avda. Alcalde Elósegui 273 in Donostia / San Sebastián, Spain, and it holds three Michelin stars in the 2026 guide for exceptional cuisine.
The house was built in 1897 by the grandparents of Juan Mari Arzak. It started as a wine cellar, then became a tavern. His parents later turned it into a restaurant known for stews and simple preparations based on Basque and Donostia recipes. In 1966 Juan Mari took over the kitchen with his mother, who taught him traditional Basque cooking.
Juan Mari Arzak won his first Michelin star early in his career, and in 1976 he helped launch the new Basque cuisine movement with a group of cooks. His daughter Elena joined the restaurant in the 1990s after training in Switzerland and in kitchens across Europe. Today father and daughter share the stoves, and the menu still rests on the Basque kitchen their family started with.
