The story
Ausiàs is a Mediterranean restaurant in Denia, at de la Cova Santa 2 in Pedreguer, Spain, and it carries a Michelin Recommended distinction for 2026. The modern Mediterranean cooking happens in a restaurant set inside Pedreguer's old town, where the streets are narrow and parking is best arranged nearby.
Ausiàs Signes and Felicia Guerra run the kitchen together. The menu is a tasting format served to the whole table, built mainly on seafood and selected meats, and it shifts with the day's produce. The kitchen cannot guarantee vegan adaptations or dishes for guests allergic to fish and shellfish at the same time, but coeliac guests can be accommodated if they note it when booking.
The Michelin guide singled out the building's facade and its contemporary interior design. The Smart Green Guide also gives Ausiàs one Radish for 2026, a Mediterranean kitchen with a quiet, considered setting.
