The story
Terra Olea is a modern Andalusian restaurant in Córdoba, at Rigoberta Menchú 2 (14011). It earned a Michelin Bib Gourmand for 2026, given for good quality cooking at good value.
Chef Paco Villar reworks traditional recipes from Córdoba and Andalucía with modern techniques. The kitchen buys seasonal, local produce, including wines from nearby designations of origin, with the D.O. Montilla-Moriles in particular focus. The restaurant also holds 1 Radish from the We're Smart Green Guide for 2026.
The salmorejo comes with roasted peppers, a crema of encebollao and smoked bluefin tuna. Oxtail is braised and boned, served on toasted buttered brioche with seared foie and a PX sauce. The meal ends with pear poached in fino wine, served with basil, lemon and cream ice cream.
