The story
Cobo Tradición, at Plaza de la Libertad 9 in Burgos, is a modern Spanish restaurant that earned a 1 Star Michelin distinction in 2026. It operates inside the Cobo Estratos complex, where chef Miguel Cobo runs two kitchens under one roof.
Cobo Tradición cooks the food Miguel Cobo knew from his native Cantabria, adapted to his adopted city of Burgos. The menu centres on fish and meat cooked over embers, alongside stews, salted fish and preserves, all built on high-quality produce. The sister space, Evolución, takes a different route with its Humanidad menu, a tasting journey through six stages that runs from Africa and Atapuerca to Altamira, the Neolithic, Rome and Mestizaje.
The chef's table is the most exclusive room in the restaurant, seating between six and twelve guests. It has private access and its own bathroom. Miguel Cobo attends the table personally and prepares custom menus for each booking. A large touch screen and Wi-Fi make it practical for small work meetings as well as family dinners.
