The story
Azurmendi is a contemporary Basque restaurant at Barrio Leguina s/n, 48195 Larrabetzu, in the Bilbao area, and it holds three Michelin stars in the 2026 guide. Chef Eneko Atxa calls it his home.
Atxa describes his kitchen as a journey from yesterday toward tomorrow, built on tradition, craft and the contemporary. The result is a seasonal Basque menu with a clear sense of place. The World's 50 Best Restaurants ranked Azurmendi 14th in 2019.
Two menus are served to the whole table: Adarrak at 315€ and the Gran Menú at 350€. Both open with a welcome picnic of tuna and piparra brioche, Gernika bean broth and a BETIZU tart with chimney butter and caviar. Later courses include charcoal-grilled lobster with shell butter and Iberian pork castañeta with a black pudding parfait and truffle. The Gran Menú adds roasted leek in a clarified porrusalda broth and a chocolate-covered partridge. Dessert is a landscape of honey and a thousand flowers.
The building was designed around sustainability, blending modern architecture with the surrounding nature, and a sustainability centre sits on its roof. The team gathers or grows the herbs, buds, flowers and some of the vegetables every day. Breads are baked in house, alongside milk bread from Juan Zabala's farmhouse and corn bread from Mungia. A trolley of seasonal cheeses arrives before the sweet courses.
The sommeliers offer a wine pairing at 150€ per person. A selection of great wines is available at 300€ per person.
