The story
7th Door is a Contemporary Korean restaurant at 4F, 41 Hakdong-ro 97-gil in Gangnam-gu, Seoul, and it holds one Michelin star for 2026. The name refers to a sequence of doors: the first five stand for the five basic tastes, the sixth for fermentation and aging, and the seventh for the restaurant itself.
Chef Kim Dae-chun presents the restaurant as the latest stage of a twenty-year pursuit of flavor. His cooking rests on the Korean art of fermentation and aging, drawing on a wide range of techniques. The kitchen aims to uncover new tastes and also to revisit older ones. The Black Pearl Restaurant Guide awarded it 1 Diamond in 2026.
A hallway leads to the dining room, and along it runs a glass cabinet of jars and pots in various stages of fermentation. Some have aged between three and ten years, prepared either by the chef or in partnership with Korean master food artisans. The room has fourteen seats at a single three-sided bar, with the open kitchen on the remaining side. From the counter, guests watch the cooks work at close range.
