The story
Grič is a family-run farm-to-table restaurant at Šentjošt nad Horjulom 24d, in the Vrhnika area of Slovenia, and it holds one Michelin star in 2026. The kitchen works from its own garden, nearby forest and meadows, and local producers.
Luka Košir took over the kitchen in 2009, in the log cabin his parents opened in 1993. He studied Nordic, Japanese and Basque ideas, then applied them to what grows close to home. Fermentation drives much of the cooking, and the cellar produces kimchi, dashi, garum, a house soy sauce and miso. Gault&Millau scored the restaurant 17.5 in 2026.
Dinner is a tasting menu that shifts with the day's ingredients. A cold starter puts cucumber in the lead, served fresh, crisp and dried, with a mussel sauce and blue borage flowers. Duck arrives with beetroot and nettle. The family also runs Slovenia's first certified organic duck farm. A parfait of seasonal figs, carob and nettle closes the evening.
The wine list leans toward natural wines. The non-alcoholic pairing is made in house, with teas, junos and other drinks. Guests can tour the ageing chamber, where time works as an ingredient. Grič also holds the Green Key certificate for its environmental practices.
