The story
DAM, at Ulica Vinka Vodopivca 24 in Nova Gorica, is a Mediterranean restaurant that earned one Michelin star in 2026. The modern Mediterranean cooking here draws on Adriatic seafood and Slovenian produce, and the menus are built around them.
Two tasting menus are served to the entire table, at 95 euros and 135 euros per person. The longer XL menu adds sashimi of Piran sea bass and Adriatic shrimp steamed with Mediterranean herbs. Gault&Millau scored the kitchen 17 points in 2026, citing its precision and its focus on the ingredient itself.
The Soča trout mosaic is marinated overnight and served with beetroot and horseradish gel, Tolmin cottage cheese and trout roe. Potato gnocchi come with asparagus and shrimp foam, and cuttlefish is paired with egg, truffles and prosciutto from the Vipava Valley. The rice dish, scented with oysters, is cooked al dente and followed by octopus with lemon puree.
