The story
COB, at 1 Letoviška pot in Lucija, Slovenia, holds one Michelin star (2026) for its seasonal, modern Slovenian kitchen. The restaurant is run by the Matjaž family, whose hospitality history reaches back to the late 19th century.
Chef Filip Matjaž leads the kitchen and draws his ingredients from the Adriatic Sea and the Istrian countryside. He refined his craft through international Michelin-starred kitchens rather than a conventional training path. His dishes mix regional tradition with playful invention, and guests often describe them as precise and visually striking.
The core experience is an eight-course menu with a seasonal thread and interactive moments, where guests take part in finishing some dishes at the table. Guests can add three signature dishes from the COB archive, including the Stone Soup and the Saltpans Pate. Gault&Millau awarded COB 16 points in 2026, describing the meal as a journey in which each course introduces a new country. Non-alcoholic pairing and sommelier-selected wine pairing are both offered alongside the menu.
