The story
Restavracija A3 operates from Grad Rajhenburg at Cesta izgnancev 3, Brestanica, in Krško, Slovenia, where its modern cuisine earned 14.5 points from Gault&Millau in 2026.
Head chef Matjaž Hribar builds the menu around seasonal ingredients and local producers, and trout is the thread running through it. The crispy trout sphere with black garlic mayonnaise opens the meal as an amuse-bouche. Cold-smoked trout comes with hazelnut cream, honey, caviar and buttermilk, alongside a concassé of Williams pear and pearl onion.
The žlikrof arrives wrapped in caramelised brioche, with onion, smoked soy and brioche foam. Veal tenderloin is cooked slowly at low temperature, seared, then finished with a reduced bone sauce. It is served with čompe stuffed with cheese, onion and crispy pancetta, and a silky cauliflower purée.
The restaurant sits inside the castle, with views over the Sava River. Its dining room is designed as a space for connection without screens. Wines are selected to pair with each course.
