The story
Salicornia, at Sermin 74 in Koper, is a seafood restaurant that earned 14 points from Gault&Millau in 2026. The kitchen builds its menu around what local fishermen bring in, so the seafood changes with the day and the season.
Vjekoslav Hederic leads the kitchen, a veteran cook with more than 25 years in hospitality. His approach rests on quality local ingredients, and the menu also draws on mushrooms, truffles, chestnuts and asparagus when they are in season. Michelin lists the restaurant as a recommendation for 2026.
Raw fish is the strongest thread. Tuna carpaccio and squid marinated in citrus and olive oil taste fresh and mineral with little added. The homemade pljukanci with muscat octopus, burrata and salicornia pesto is a signature, and the salicornia is also fried for crunch. Oven-baked turbot is another highlight of the seafood menu.
The dining room holds only a handful of tables, which keeps it intimate. Jan Sincic, a sommelier with WSET level 2 training, pairs wines with the courses. The list leans on Slovenian bottles and includes small boutique wineries, with Croatian Istrian, Friulian and Champagne labels alongside. The restaurant has air conditioning and wheelchair access.
