The story

The Thyme Restaurant, Gros Islet: Beachfront Caribbean and French Dining

The Thyme Restaurant sits on Malabar Beach Vigie, Castries City, in the Gros Islet area of Saint Lucia. Its Caribbean and French cooking earned a Wine Spectator Award of Excellence in 2023.

The kitchen

Thyme is part of the StolenTime resort, where Chef Peter Juma leads the kitchen. He is originally from Kenya and had 26 years of resort experience across Dubai, Kenya and Saint Lucia when his profile was published. He has been on the Rendezvous team since 2001. The menu draws on Italian and wider European cooking as well, and the restaurant lists small plates, a set lunch menu and a wine pairing option.

The setting

The restaurant offers beachfront dining and outdoor seating, with a private room for groups. Thyme is one of several places to eat on the property, alongside the Malabar Beach Club and a champagne bar. The resort's own history mentions a toasted coconut dessert so well liked that the crew of the Royal Yacht Britannia took the recipe back on board.
