The story
Terroir serves modern cuisine at Rua da Madalena 271 in Lisbon, and the Michelin Guide lists it as a Recommended restaurant for 2026. Owners Inês Santos and Erik Ibrahim opened it on 5 August 2020.
Chef Guilherme was born in Lisbon in 1994 and leads the kitchen. His earlier postings include Ocean, Fortaleza do Guincho and Fifty Seconds by Martín Berasategui. At Terroir he cooks around simplicity and good produce, applying techniques from around the world to national ingredients.
The carta changes with the seasons as the chef adds new creations. Two tasting menus run alongside it: eight moments at 115 € and a shorter five-moment format at 95 €. Each has a vegetarian version at the same price. A wine pairing costs 75 € with the longer menu and 55 € with the shorter one.
The room aims for a friendly, relaxed mood, with an experienced service team guiding the meal. The wine list leans on Portuguese bottles. Owners Santos and Ibrahim designed the place for friends and family to share flavors of Portugal and beyond, with pairings that teach something along the way.
