The story
Loco, at Rua dos Navegantes 53 B in Lisbon, holds one Michelin Star (2026) for its contemporary Portuguese cooking. The kitchen works with seasonal produce and offers farm-to-table dining, with vegetarian and vegan options and wine pairing available.
Alexandre Silva is the executive chef. He trained in kitchen and pastry at the Hotel Management and Tourism School of Lisbon and studied molecular gastronomy at the Higher Institute of Agronomy. He won the TV show Top Chef on RTP1 in 2012, and later cooked in Alentejo and at Bica do Sapato in Lisbon. His Project 4th Floor, an experimental kitchen, looked into Portuguese producers, products and techniques.
The kitchen's own write-ups describe how it reworks familiar flavours. Its "Pastel de Bacalhau" is a cod tartare with parsley puree, egg yolk puree and onion powder. A dessert called "Ovelha nas Nuvens" builds on sheep's milk, with condensed milk, ice cream, yogurt foam, requeijão powder and a meringue cloud. Another uses medronho (arbutus berry) puree with mushroom yogurt and malt toffee. These dishes date from the 2019 menus.
Pastry chef Carolina Pereira previously worked at Feitoria and did an internship at El Celler de Can Roca. João Marujo runs the dining service. Sérgio Caldeira, who has worked with Silva since the Bocca days, is training as a sommelier. Loco also carries a 1 Radish rating (2026) from the We're Smart Green Guide.
