The story
Encanto, José Avillez's vegetarian restaurant at Largo De São Carlos 10 in Lisbon, holds one Michelin Star in the 2026 guide. Its tasting menu gives vegetables the lead role from the first course to the last.
The menu is 100% vegetarian and runs to about 12 moments. Leaves, seeds, seaweed, mushrooms, flowers, eggs and cheeses appear alongside fruit and vegetables, and the kitchen plays with contrasts of colour, texture and temperature. The dishes follow the seasons, so the menu changes with what small local producers can supply.
About 85% of the ingredients are bought directly from producers the chef has chosen, and roughly 90% of the vegetables and fruit are organic. Some of the produce comes from Casa Nossa, José Avillez's own property in the Alentejo, beside the Alqueva reservoir. The restaurant opened in March 2022 and received the Michelin Green Star in 2025. In 2026 the We're Smart Green Guide gave it 4 Radishes.
Head chef Diogo Formiga studied biology and marine biology, and he spends much of his time researching ingredients, suppliers and ways to waste less. To drink, the house suggests biodynamic wines and craft beers. There are also homemade juices, infusions and kombuchas, which can be ordered à la carte or as a matched menu.
