The story
Rusiko, at Wierzbowa 11 in Warsaw, is a Georgian restaurant that received a Gault&Millau score of 11 for 2026, and it also holds a Michelin Recommended mention for the same year. The kitchen cooks Georgian dishes built around khachapuri, khinkali and walnut-based starters.
Khachapuri comes in several styles, and the walnut appetizers badrijani and prasi give the meal its nutty, herbal opening. Khinkali and lamb, prepared in more than one way, anchor the main courses. The Georgian cooking here is bold and direct, with flavors that stay close to the traditional recipes.
Warm tones set the mood, with hand-woven carpets and tapestries on the walls. Photographs of Georgian families and portraits of children add a personal touch. Warm lighting and plenty of plants soften the space, and the windows look out toward the Grand Theatre and the National Opera.
The wine list is short and focused on Georgia. Several bottles come from the family's marani (winery) in Kakheti, named after the owner's grandfather. The wines are made in qvevri, clay amphorae buried underground, the oldest method in the region. According to the restaurant, these bottles are sold in Poland only at Rusiko.
