The story
Restaurant Lutum, at Markt 15 in Wijk bij Duurstede, is an international kitchen built on ingredients from the surrounding countryside. Gault&Millau awarded it 15.5 points in 2026, citing chefs Roy Schipper and Rik Veen and their hyperlocal approach to regional produce.
Schipper and Rik Veen cook together, while sommelier Toby Sadettan runs the room and the wine list. Vegetables, herbs and fruit come from the Wijk Vegetable Garden, the Wijk Food Forest and growers such as Telers van de Put. The open kitchen aims to waste nothing, and the menu changes with the season, offered as four, six or eight courses.
Lekker500 singled out river crayfish from the Merwede, served with a mayonnaise made from its own heads. A brook trout tartare comes with crispy zucchini flower tempura and a granita of fresh and fermented plums. Venison roasted on the bone arrives over a crumble of sulfur tuft and a black tea sauce.
The restaurant occupies a 16th-century building in the city centre, once known as 't Klooster before its renovation. Wooden ceiling beams, stained-glass windows and an old stone floor remain. There is also an outdoor terrace.
