The story
De Moerbei, at Dorpsstraat 5a in Warmond, is a modern French restaurant that holds one Michelin star (2026). The dining room sits in a former farmstead, and the kitchen keeps a classic French base with contemporary touches.
Chef Michael Corpel has led the kitchen since 2022. He builds dishes around pure flavours and high-quality fresh ingredients, and he wants guests to recognise what is on the plate. Gault&Millau awarded the restaurant 15 points in 2026.
The menus change regularly, but recent dishes on the printed menu include Wagyu A5 with goose liver and truffle, turbot with lobster and green asparagus, and a vegetarian courgette blossom with chard, olive, sesame and salted lemon. A vegetarian menu runs alongside the regular courses, so the kitchen plans for both meat and plant-based guests.
The restaurant has three dining rooms, and the main room seats up to 36. Maître-sommelier Frank de Haas selects the wine list and also offers wine pairings with the meal. In good weather the sunny garden terrace opens, and parking is free on the restaurant's own grounds.
