The story
DIELS is a modern French restobar at Vijzelstraat 2 in Wageningen, listed as Michelin Recommended in 2026. It calls itself the city inn of Wageningen, and the menu bears that out: relaxed in format, serious in the details.
Dietmar Baars runs the stove, while Elsko Sjabbens looks after wines, beers and the serving boards from the bar. Gault&Millau gave DIELS 13 points in 2026 and praises the varied menu of bites and dishes, with prices it calls as accessible as the room itself.
Small plates start at €4 for an oyster with shallot and raspberry red wine vinegar. Pata Negra is €15, and Manchego comes with quince jelly. Among the starters, a crémeux of white asparagus arrives with seared asparagus, hazelnut and mushroom vinaigrette. The tuna sashimi is paired with Dutch shrimp, avocado cream and a lovage vinaigrette.
Mains lean on seasonal produce. Ravioli with goat cheese, mushroom and hazelnut comes with fresh truffle, and slow-cooked black-legged chicken is served with lobster. Lamb rump comes with a crisp wonton filled with lamb neck. The chef's surprise menu runs three courses at €49.50, four at €59.50 and five at €69.50. For dessert, a passion fruit tartelette with vanilla cream and caramel is among the options at €10.
