The story
Robuust, at Kerkplein 12 in Vollenhove, Netherlands, is a farm-to-table restaurant where the Pot brothers serve a seasonal tasting menu. Gault&Millau awarded it 13.5 in 2026, and the kitchen works with fish from Urk and vegetables from the Noord-Oost Polder.
The menu changes every two months and runs from four to seven courses. Raimon and Peter Ian Pot cook with the seasons and use local producers, including bread from a nearby baker. Guests can ask for adjustments to suit their tastes and dietary needs.
Each course can be paired with wine or a special beer, and beer is a long-standing passion here. The dining room has abundant natural light, and the garden terrace is a pleasant place to sit in good weather.
