The story
Auberge des Moules at Visserslaan 3 in Philippine, Terneuzen, serves French-leaning seafood cooking and holds a Michelin Recommended listing for 2026. The restaurant stands where the Netherlands' first mussel harbour once lay.
Joris Jansen runs the kitchen with his wife Manon Jansen-Tieleman, whose grandfather, the mussel fisherman Mr. Wiskerke, founded the auberge. A mussel logo turns up on the water carafes and even on the chocolates served with coffee. In season, the mussels arrive in large white enamel pans with fries and thick slices of bread for the juices.
Beyond mussels, the menu holds homemade shrimp croquettes, fresh lobster bisque and grilled gamba with langoustine jus. Skate wing comes with white butter sauce and capers. Lobster can be ordered Thermidor, Belle-Vue or grilled. Meat eaters have Zeeland lamb and a Dutch-reared tournedos, and a vegetarian dish is available on request. Gault&Millau gave the kitchen 13.5 points in 2026 and singled out the freshness of its fish and shellfish.
The setting is classic, with white linen on the tables, a large bar and a bright conservatory. A reception corner with leather chairs suits an aperitif. Belgian families fill many of the larger tables, and the terrace is small, so outdoor seating is not guaranteed.
