The story
TOV sits at Loet 8 in Schagen, a modern cuisine restaurant that received a Michelin Recommended distinction in 2026. The kitchen draws on French, Asian and Mediterranean cooking, and the room is just outside the bustle of the market square.
Owner-chef Roy Strijbos trained in classic French technique and has run the kitchen alongside hostess and sommelier Marlies Baken for more than twenty years. He sources from small producers, many of them local, and replaces the full menu every month. Flavours come from his childhood in Haarlem, where he grew up among Indonesian, Surinamese and Turkish neighbours, and from years of travel.
Reviewers have singled out a corvina tartare with crab and kalamansi cream, which one 2026 review called the most successful course of its evening. Earlier menus featured mackerel tartare with langoustine cream, seasoned with ginger and lemongrass, and muscovy duck served two ways. Dessert has included pavlova with lime shiso sorbet, strawberry and vanilla cream. Gault&Millau gave TOV 13.5 in 2026.
Linen covers the tables, and the open kitchen gives guests a view of the pass. Climate-controlled wine cabinets stand in the room, and there is a terrace for warm days. Service is friendly, though reviewers have noted that a five-course dinner can run past three and a half hours.
