The story
Aan de Zweth serves modern French cooking at Rotterdamseweg 480 in Schipluiden, on the Rotterdam side of the water toward Delft. Gault&Millau gave it a score of 14 for 2026.
Chef-owner Justin Koopman was born and raised in Rotterdam. He trained at Zeezout, Parkheuvel, FG restaurant and 't Ganzenest before developing his own style. He describes it as seasonal and modern, with a Rotterdam sense of restraint. He and maître Indy Chiron Akkermans have run the house since March 2025.
The set menu runs four to six courses. Recent plates include hamachi with radish, Buddha's finger and fennel, and white asparagus with ajo blanco, grapes and smoked almond. Lamb arrives with peas, green asparagus and baharat. À la carte adds turbot with combava and leek, and A5 Wagyu with pumpkin and a satay-spiced jus. The Michelin Guide lists the restaurant as Recommended for 2026.
The building stands where De Zwethheul once drew diners for years, and the terrace looks over the water when the weather allows. Inside, the chef's table sits in the kitchen. Koopman talks guests through a menu paired with wine and champagne. The wine list leans on the seasons, from established houses to small craft producers.
