The story

Restaurant 1857 in Roosendaal: French fine dining in an 1857 coach house

Restaurant 1857 is a French fine dining restaurant at Molenstraat 18 in Roosendaal, and it holds one Michelin star (2026). Joey and Joke van Heesbeen run the room in a former coach house dating from 1857, with the kitchen on show and the dining room set up for long, unhurried evenings.

Chef and cooking style

Joey van Heesbeen cooks a refined, unconventional fine dining menu and likes to add surprising elements to the plate. Vegetables and herbs, some from the restaurant's own garden, play a large part in his cooking. Joke van Heesbeen hosts the room and pours the wines. Gault&Millau awarded the restaurant 15.5 points in 2026.

Dishes on the plate

A starter of new herring comes with cucumber, sansho pepper and verbena, and reviewers found it salty, tingling and fresh. Langoustine is pan-seared and glazed, served with a shellfish XO sauce, langoustine mayonnaise, yuzu gel and caviar. The veal tongue, with eel, kalamansi, green cabbage and koji, was singled out as the highlight of one recent visit.

Room and chef's table

The old bread oven and the stone horse trough are still in place, next to a contemporary interior. The open kitchen sits beside a chef's table bar, where guests can watch the team plate each course and ask questions. Diners can choose a multi-course menu, a vegetable menu, or à la carte.

Chic but not stiff” is the slogan of chef Joey and hostess and sommelier Joke van Heesbeen. They have a wonderful setup in their old coach house from 1857 (hence the name), and it shows, as guests find their way there without fail. The ambiance is enchanting and contemporarily furnished, while preserving old elements such as an authentic bread oven and a horse trough. Joey cooks a refined, unconventional fine dining cuisine and doesn’t shy away from adding surprising elements to his dishes. From the chef’s table, you have the privilege of closely following the chef and his team working in the open kitchen, and you are welcome to ask questions. Please do, as they are gladly answered. You can choose from a multi-course menu, a vegetable menu, or à la carte. A visual treat is the starter of new herring topped with cucumber, Japanese pepper (sansho), and verbena. Salty, tingling, and fresh, they compete for dominance on the taste buds. In the glass, an aromatic 2021 American Chardonnay from Wente Vineyards. Beautifully glazed pan-seared langoustine comes accompanied by a robust shellfish XO sauce, langoustine mayonnaise, yuzu gel, and caviar. What an explosive party on the plate. The highlight of the evening is silky-smooth veal tongue, accompanied by eel, kalamansi, green cabbage, and koji. The presentation is once again dazzling, and we would happily take home the crockery it is served on. Nothing is left to chance here. A place worth going through hoops for. We’ll be back!

In a narrow side street in the center of Roosendaal sits a restaurant where the past and present beautifully come together. The old bread oven and stone trough point to the past, while the interior today looks contemporary and lively. Chef Joe...

An excellent fine dining restaurant, housed in a renovated coach house dating back to 1857, located in the heart of Roosendaal. The still young and ambitious pastry chef Joke and head chef Joey van Heesbeen realized their dream here in 2021, having first gained the necessary experience in top restaurants in Belgium. A subtle renovation recently gave the interior a modern upgrade. "Chic, but not stiff" is the couple's motto, and it couldn't be truer. In the open kitchen, the white brigade is already busy preparing. Vegetables and herbs (from their own garden) play a major role in Joey's cooking style; he loves new flavor combinations and surprising ingredients without losing sight of purity. Sharing a culinary experience is exactly what he aims for. Alongside the regular menu, a special vegetable menu is also available to order. À la carte options are available on weekdays, while weekends feature set menus only. We start with two visually stunning dishes, presented on beautiful crockery: king crab and sea bass, adorned with radish, daidai juice (citrus), and lemon thyme. Absolute flavor bombs. Also outstanding is the course of perfectly cooked whiting with tomatillo, verbena, codium, and oyster. Want to watch the chef's work up close? Try to secure a seat at the chef's table and experience firsthand how much passion and expertise go into every dish. You will definitely be hearing plenty more about Joke and Joey.

The young couple Joke and Joey van Heesbeen worked at renowned Belgian starred restaurants, and that experience shines through here today in the heart of Roosendaal, where they converted a former 1857 coach house into a charming restaurant that has been widely loved in the region. Right upon entering, the chef impresses us with amuse-bouches whose refined flavor, complexity, presentation, and technical execution reveal class and ambition. By the way, it is a stunning venue: stripped walls, arched facades and windows, an open kitchen, a sunroom, and sturdy bare tables. We start with a fresh salad of mussels and cockles, apple, sugar snap peas, wasabi, and kombu. This is followed by a tartare of coarsely chopped beef, blackberry, sorrel, shiso granita, and homemade hazelnut kombucha. Delicious. We pair it with a floral Cape blend of viognier and roussanne from Babylon’s Peak. That wine also accompanies the slowly cooked poon, served with pickled pumpkin, physalis (Cape gooseberry), cedarwood dashi, and pumpkin seed oil. The Anjou pigeon, the pièce de résistance, also earns its share of praise. Roasted on the bone, with the breast subsequently finished sous vide, it is served tender, savory, and juicy, alongside a pigeon jus with barbecued onion and liver, plus a crispy-fried pigeon thigh wrapped in pastry threads. To finish, a refreshing dessert of tomato, white chocolate, rose, and huacatay (black mint). A place to watch.
