The story
Versaen sits at Marktstraat 19 in the old centre of Ravenstein, where its Dutch and French kitchen earned one Michelin star in 2026. Chef-owner Hans Derks cooks from French foundations with flavours from further afield, in a building that was once a butcher's shop.
Derks cooks with seasonal produce, mostly local and Dutch, and he is mindful of food waste. The restaurant is part of the Dutch Cuisine network, so each menu includes at least one dish built on whole-animal cooking and vegetables from the region. Gault&Millau gave Versaen 14.5 in 2026 and described classic cooking with modern accents, combinations that feel surprising without any fuss.
The summer menu pairs eel with asparagus and dashi, stracciatella with pesto and tomato, and a rib of free-range pork with lardo and morels. Guests can choose a three- to seven-course menu or order dishes a la carte. A three-course lunch and a four-course dinner are also served, and the kitchen lists vegetarian and gluten-free options.
A glass panel in the floor looks down into the wine cellar, and round openings in a white wall reveal the original stone behind it. The wine list holds more than 500 references from old and new wine regions. A Coravin system lets guests taste rarer bottles by the glass.
