The story
Bravoure, at Dorpsstraat 88, 8899 AL Vlieland in Oost-Vlieland, is a French-leaning restaurant inside Badhotel Bruin, and Gault&Millau awarded it 13.5 points in 2026.
Max Grootendorst, a young chef from Leidschendam, now runs the kitchen. He replaced the former Italian menu with a short à la carte list of mainly French and modern Dutch dishes, plus a multi-course tasting menu. Earlier Lekker500 reviews describe Italian-leaning cooking under Francesco Pirone and a French-based kitchen under Raymond Venmans.
The zucchini ribbon starter with goat cheese cream and crunchy pistachios is a light opener, followed by a risotto with carrot broth, orange and creamy stracciatella. The sea bass arrives pan-seared with pommes Anna and mushroom sauce, while the beef cheek is braised until it is soft enough to pull apart. Gault&Millau also recommends the room for a late breakfast or a plate of oysters.
