The story
Red Chilli, at Oude Provincialeweg 2 in Nieuwe-Niedorp, is an Asian restaurant that received a Michelin Recommended distinction for 2026. Gault&Millau scored it 14 the same year. The building is hard to miss on the provincial road between Alkmaar and Schagen, painted a bright red.
Chinese master chef Tso Min Cheng cooks a Chinese-Vietnamese menu built on fresh produce, much of it sourced locally. Reviewers point to his balance of herbs and spices, which makes the flavors intense without being fiery. Host and sommelier Arno de Maa pairs wine, sake or tea with the courses.
Yellowfin tuna tartare arrives with vintage soy sauce, horseradish and sesame. King gamba ravioli sits in a laksa sauce, and beef shin is braised in massaman curry with lemongrass. The dessert often surprises, such as vanilla cheesecake ice cream with blackcurrants and balsamic pearls.
